Migrate emails IMAP from Hostgator to OVH Email pro + hosted Exchange

I currently have 78 emails hosted imap hostgator VPS
I need to transfer
– 68 email accounts to OVH email Pro (those under 10gb)
– 10 email accounts to OVH Hosted exchange

Obviously it is important that the transfer be done overnight and then we can switch the DNS records
