gravity forms code for email to transfer to Formstack Documents

My project: Client enters data into website (Gravity forms), then a zap (from Zapier) sends to Formstack Documents (formerly webmerge). Currently I get error that email address is not completed. However, it is completed. I believe there is an error in tags. Email address is required since Formstack Documents sends it to Sign Now for signatures.

Once this is working I would like to set my website up to work with Zoho so that I am not so dependent on all the different products. I purchased Zoho One that have the forms, sign, and CRM. This may be a bigger job so I just want to get it working and then build this out on the side and make the complete switch when ready.

I would like someone that could handle both of these items.
